ICTP/IAEA Fellowships, ICTP is especially good for students in developing countries, and have loads of programs you should check out.
Les Houches Summer School, I attended one and it was amazing!
A lot of the opportunities I had as a student did however come from ‘cold emailing’ researchers, but in a friendly and approachable way.
Send an email to a researcher at a university and ask if they have a project for you. You're one email away to do something very cool! You can even get sponsored financially by, for instance, London Mathematical Society's Undergraduate Research Bursaries.
